A quick breakfast, a late evening snack or for a post dinner nibble, these banana oatmeal pancakes require minimal work and yet are oh-so-yum. And the best thing? With a little switch in the ingredients, this healthy recipe can be turned vegan too.

What makes Healthy Banana Oatmeal Pancakes healthy?

This recipe uses overnight soaked oatmeal as soaking facilitates to reduce phytates, that if let be binds to important minerals like Calcium, Iron and Zinc making them difficult for your body to absorb. So bye-bye Phytates! What makes it more healthy are the bananas, an abundant source of Potassium, Vitamin B6 and Vitamin C and let’s not forget how nummy they can be.

Ingredients to make Healthy Banana Oatmeal Pancakes

1 ripe banana

1/2 cup soaked oats

½ cup Milk ( Substitute for plant-based if Vegan)

1 egg ( Substitute for Flaxseed egg if Vegan)

1 tsp Baking Powder

1 tsp Maple Syrup

Butter (for glazing)

Steps to make Healthy Banana Oatmeal Pancakes

  • Step 1 : Put all the ingredients in a high powered blender and blend to get a thick batter.
  • Step 2 : Glaze a hot girdle or a pan with some butter and pour a scoop (about half a cup) of batter. Make sure this is being done over medium-low heat.
  • Step 3 : When bubbles appear on the top, flip it. Let it cook through.
  • Step 4 : Drizzle with maple syrup, some fresh fruits or your favorite jam.
