You already know Spinach is a great source of Iron and many other minerals. Cottage Cheese is this delicious, wholesome ingredient that takes the recipe to a whole new level. What Makes Keto Spinach and Cottage Cheese Curry Healthy?

Well, we all know the secret of Popeye- Spinach! Spinach is an incredible source of Iron, Vitamin K, Vitamin C, Magnesium and also Folic Acid. It supports healthy development of eyes, prevents Macular degeneration (a medical condition which may result in blurred or no vision in the center of the visual field), treats inflammation and helps alleviate Anemia. But what you might not know about Spinach is it has abundant amounts of oxalates that may combine with calcium in your body to form kidney stones. This can be prevented by a number of ways, one of which is eating spinach with calcium rich foods that causes the oxalates to bind with the calcium in your digestive tract and be eliminated from there. Therefore, we are combining Cottage Cheese (Paneer) with Spinach in this recipe. Cottage Cheese (Paneer) by itself is also very nutritious as it not only has high amounts of calcium, but is also rich in Potassium and Selenium. It is also a high protein food thereby making it keto-friendly!

Ingredients To Make Keto Spinach and Cottage Cheese Curry

4 tbsp Ghee
4 cups Spinach (150g)
½ Red Onion (medium-sized, finely chopped)
1 tsp Cumin
2 Garlic Cloves (finely chopped)
1 ¼ cups Paneer (150g)
Salt (to taste)
1 tsp Garam Masala
2 tbsp Heavy Cream (for garnish)

 

How To Make Keto Spinach and Cottage Cheese Curry

Step 1 : Blanch the Spinach
To blanch the Spinach, take a pot of water and boil. Put aside a bowl of ice water too. Add the washed Spinach leaves in the boiling water and remove when they are crisp tender and still bright green (this may take 15-20 seconds). Then, quickly transfer to the bowl of ice water.

Step 2 : Make the Spinach Purée
Drain off any excess water from the leaves and grind it. To make a fine purée, add a little bit of water.

Step 3 : Cooking the Spinach
Make sure you don’t overcook the spinach as it may strip off it’s nutritional value. In a hot pan, add in ghee and let the cumin splutter. Then, add chopped garlic and sauté until a light brown tint is seen. Next, add finely chopped red onions. Wait for them to turn translucent. Proceed to add the puréed Spinach and salt to your liking. Cook for about 2 minutes or so. Add in the heavy cream to give it that rich and creamy texture. You can also add Cashew paste (by grinding 6 cashews in 3 tbsp water) at this point for a creamier curry if you’d like.

Step 4 : Cut and Sauté the Paneer (Cottage Cheese)
Cut the Paneer into an inch cubes. In another pan, add a little ghee and sauté the Paneer (Cottage Cheese) until you see brown on the sides of the Paneer cubes.

Step 5 : Combine Spinach and Cottage Cheese
Add the sautéed Paneer (Cottage Cheese) to your Spinach curry and give a quick stir. Drizzle with heavy cream on top, serve hot with Keto Garlic Naan and Devour!

How To Store Keto Spinach and Cottage Cheese Curry

You can store this beautiful bright green curry in an air-tight container in your refrigerator for a day. Eating it right off the stove, warm and creamy gives you the full experience of the dish.

How to Pair Keto Spinach and Cottage Cheese Curry?

You can pair this delicious, healthy and incredibly nutritious dish with hot Keto Garlic Naan, or regular Naan. You can also have it with aromatic long-grained rice, but that would overdo your carb intake.
