Carrots & Cane Sugar Dessert has a delicate and pleasant flavour and a dulcet aroma that’s simply captivating. This is an Indian dessert, often made in the winters. It’s one of those desserts you can freeze and keep for as long as it lasts, but trust me it won’t last too long because it's just that good.

What makes Carrots & cane Sugar Dessert healthy?

Carrots & Cane Sugar Dessert is made of whole milk, cane sugar, carrots and ghee. Although Cane Sugar isn’t the healthiest, I believe when you’re strict with your diet, you can reward yourself every now and then. Other ingredients are full-fat Milk and Ghee, both healthy fats you should include in your diet. Carrots are an excellent source of Vitamin A (in the form of beta-carotene), several B vitamins, Potassium and Vitamin K.

Ingredients to make Carrots & Cane Sugar Dessert

0.5 lbs Carrots

3 Cardamom Pods

2 tbsp Ghee

1 cup Full-fat Milk

1 cup Cane Sugar

Nuts (optional)

Steps to make carrots & Cane Sugar Dessert

Step 1 : If you’re using nuts, soak them the night before or let them sit in hot water for 15 minutes.

Step 2 : Wash, peel and grate the carrots. Be careful not to grate the carrots too fine as it can make it mushy, giving the dessert no texture. 

Step 3 : In a wok or a Dutch oven, pour in ghee and fry the nuts. If you’re not using nuts, you can skip this. Remove and set them aside in a bowl when you see a golden hint on the nuts.

Step 4 : Puncture or use Mortar and Pestle to thump the cardamom pods. Now throw in the cardamom pods in the hot ghee and wait for a few seconds.

Step 5 : In another pot, heat up the milk to thicken it up a little, for about 10 minutes or so.

Step 6 : Place all the grated carrots in the ghee and sauté consistently until they’re soft and all the moisture has been soaked up, for about 20 minutes.

Step 7 : When the carrots are nice and mushy, add the hot milk to the carrots and cook over medium heat, stirring constantly to prevent it from sticking to the bottom. This may take 20 minutes or so.

Step 8 : When the milk is completely soaked up by the carrots, add sugar and stir occasionally. 

Step 9 : You will know the dessert is done when the carrots are dripping with syrup. 

Step 10 : Garnish with nuts (if using) and serve hot!

How to store Carrots & Cane Sugar Dessert

Wait for the Carrots & Cane Sugar Dessert to cool down completely before putting it in an airtight container in the refrigerator. It stays well in the fridge for up to a week or you can freeze it for up to 3 months. Don’t forget to heat it up with a dollop of ghee in a microwave (1-2 min) or a pan on stovetop before serving.

Some ingredients you can substitute

  • If you don’t have full-fat milk, you can always use Reduced fat, but full-fat milk makes the dessert rich in taste and texture.
  • If you want to switch Cane Sugar with Jaggery, you can. The taste does not differ much, however the final look of the dessert gets a little darker.

What you can pair the Carrots & Cane Sugar Dessert with

You can top the dessert with a scoop of Vanilla ice-cream and garnish with Chopped nuts and Saffron strands.
